Introduction

Coffee wasn’t originally consumed in the form we know it today, as a hot beverage made from boiling water. That practice only began around 1000 A.D. Until then coffee was largely linked to medicinal and religious purposes by the Arabs. Soon the feeling of exhilaration from the caffeine of the drink became a sought-after side effect and thus the story of coffee as a beverage begins.

The Arabs refined their methods of preparing the drink over many years. For over 300 years, coffee drinkers drank the grounded coffee beans right along with boiled water. Then, they began drinking the liquid alone, leaving the grounds to settle at the bottom of the cup. As methods for preparing coffee became more refined, the popularity of the drink also spread around the world. The popular trend towards flavored coffees originated in the United States during the 1970’s. Today, coffee is the world’s most popular beverage after water, with over 400 billion cups consumed annually.

Iced Coffee

Here’s what you need

Sugar to taste

One fourth cup freshly brewed coffee

Half cup cold milk

One fourth cup crushed ice

Half tablespoon thick cream

Grated plain chocolate

How to make

Since the coffee is generally diluted with milk or cream it should be very strong; therefore increase the proportion of coffee. Put a little crushed ice into each glass, fill two third cup of it with very cold coffee, then fill with cold milk or thin cream; or use milk, and top the glass with thick cream and a little grated plain chocolate. When topped with cream serve with a long spoon.

Gaelic or Irish coffee

Here’s what you need

Whisky to taste

Sugar to taste

Three fourth glass black coffee

1-2 tablespoon thick cream

How to make

Put whisky into warmed glass; add coffee and sugar to taste. Pour cream over back of spoon to give thick coating on top. Sip the very hot coffee through the layer of cool cream.

Hot coffee Rum Punch

Here’s what you need

2 pints strong black coffee

6 cloves

2 tablespoon sugar

Stick of cinnamon

Finely pared rind of two oranges

Glass of rum

How to make

Put sugar, orange peel, cinnamon and cloves into a small saucepan. Add rum and bring nearly to boil, stirring gently. Take care that it does not catch fire! Stir into coffee and serve.

Ice cream Parlor mocha sodas

Here’s what you need

Half cup hot water

4 scoops chocolate ice cream

8 tablespoon finely grounded coffee

1 quart club soda

2 cups milk

Sweetened whipped cream

How to make

Place hot water in a medium sized pitcher. Stir in coffee. Finely grind into powdery texture, until dissolved. Stir in milk. Place one scoop of ice cream into each of the 4 ice cream soda glasses. Pour coffee/milk mixture equally into each glass. Fill glasses almost to brim with club soda. Top with sweetened whipped cream.

Here’s what you need

4 teaspoons chocolate syrup

One fourth tablespoon nutmeg

Half cup heavy cream

1 tablespoon sugar

Three fourth tablespoon cinnamons

One and half cups extra-strength hot coffee

How to make

Put 1 teaspoon chocolate syrup into each of 4 small cups. Combine cream, one fourth teaspoon cinnamon, nutmeg and sugar. Whip. Stir remaining half teaspoon cinnamon into hot coffee. Pour coffee into cups. Stir to blend with syrup. Top with whipped cream.

Coffee milk shake

Here’s what you need

Ice or ice cream as required

Sugar

Half tablespoon instant coffee powder

Cold milk

How to make

Put the ice or cream into a jug and add instant coffee powder. Mix briskly then gradually whisk in the milk. Add sugar to taste.

Frosted mochas

Here’s what you need

One cup fresh brewed coffee

One pint vanilla ice cream, softened.

Six tablespoon chocolate syrup

One cup prepared cold coffee

How to make

Blend the hot coffee and chocolate syrup in blender container until smooth. Cool to room temperature. Pour into a medium bowl. Add softened ice cream and cold coffee and beat it with rotary beater until smooth. Spoon into tall glasses, and serve immediately.

Coffee ala Chocolata

Here’s what you need

One cup freshly brewed coffee

One ounce chocolate mint liquor

Whipped cream

Chocolate shaving

How to make

To one cup of freshly brewed coffee add one ounce chocolate mint liquor. Top with whipped cream and shaved chocolate
